A mescal from Rey Campero made from the rarely seen jabali agave by Destileria Herencia de Sanchez in Candeleria Yegole in Oaxaca. The agave is cooked in an earth pit, fermented and then distilled in a copper still. Jabali is known for being difficult to work with, but this spirit tames it to produce a richly smoky and fruity agave.
